It occurred to me recently that, despite all the cannabis recipes I’ve created for various publications, I’ve never made a gummy cake. I’ve never even stuck gummies on a cake. So, when my friend Rudi’s birthday came around, and knowing he’s a fan of gummies for sleep, I figured it was the perfect time to try it. I made this cake for him, and it worked like a charm. He eats half a layer, and sleeps like a baby. We’re still trying to take away the rattle.
The process isn’t hard, but it does take some time. Luckily, you can break it into steps over a couple of days. Each layer of the cake contains about 2 mg of THC, I think there are 11 layers. I ate a bunch of layers over the course of the day. I really should count them. I used a chopstick to poke a hole in the top, for the candle.

If you are using an infusion that isn’t oil-based, you can skip the lecithin, which acts as an emulsifier. Otherwise, the instructions are the same. I did consider microwaving the whole thing for ten seconds to get the layers to melt together a bit, but that would have made it harder to eat, and wedges would be tricky if it all fused into one mass.
I infused the oil with the strain Forbidden Fruit, one of my all-time favorites. It is not always easy to find, but to me, it smells like freshly cut grapefruit… delightful. cup water, coconut water or juice (no citrus juice)

tablespoons honey

teaspoons apple cider vinegar

Method
- In a small bowl, combine the two packets of gelatin with ¼ cup water. Allow to sit for at least 8 minutes. Cover a baking sheet with parchment.
- Place the Jello and ¾ cup liquid in a small saucepan. Add the honey, vinegar, lecithin, and cannabis oil. Over low heat whisk until combined.
- Add the gelatin and continue to whisk frequently, making sure the ingredients are well blended. Whisk on low for 8-10 minutes. Pour mixture onto the prepared sheet pan. Allow to set for at least two hours. For quicker results place in the fridge.
- Using a 3–4-inch biscuit cutter, make 12 circles, pressing the cutter onto the firm gummy. Remove the gummies from the pan and place on a new sheet pan covered with parchment.
The gummies are now ready for stacking. There’s nothing to it, just pick the colors and make the cake, using as many as you like. Once you place them, they don’t move around, so transport is easy. With the scraps that I had left after the circles were removed, I made a bunch of low dose, small gummy hearts, and fruit shapes.
