Guacamole, while delicious, isn’t the only way to enjoy this popular fruit. Avocados are native to Mexico and, although botanically classified as a fruit, they are savory and most often treated like a vegetable. Technically, guacamole could be considered a fruit salad, but that doesn’t quite feel right.
Avocados are a powerful source of key nutrients, including healthy fats and fiber. They also have anti-inflammatory and antioxidant properties and are believed to help reduce the risk of heart disease. Interestingly, I’m currently living part of the year in Mexico where avocados are abundant, but it took me two days of searching to find a ripe one – quite the surprise!

For this recipe, I used one of my favorite strains from Pruf Cultivar in Oregon. I infused an ounce of Dark Star into two cups of good-quality olive oil. Often, I just drizzle the oil over salads or pizza, so using top-quality oil is important.
I combined the infused oil with mashed avocado, which virtually eliminates any cannabis taste. Some people enjoy the flavor, while for others it’s a complete turnoff. I’m on the fence – it really
depends on the dish. Avocado works well, but peach cobbler, not so much. Also, different strains have distinct tastes. If you are embarking on a cooking with cannabis journey, you’ll discover the very different flavor profiles of the many unique strains. Enjoy the voyage.
Avocado Toast
Serves 2, 5mg per bread slice
Ingredients
- 2
slices rustic bread, lightly toasted
- 1
large ripe avocado, pitted and peeled
- 2
teaspoons cannabis olive oil, or equivalent dose with your infusion choice
- 1
teaspoon lemon juice
- 0.125
cup red onion slivers
- 2
teaspoons capers
- 0.33
cup goat cheese

Salt and pepper
- 2
slices rustic bread, lightly toasted
- 1
large ripe avocado, pitted and peeled

teaspoons cannabis olive oil, or equivalent dose with your infusion choice

teaspoon lemon juice

Method
- Place the toasted bread on your work surface.
- In a small bowl, mash the avocado and cannabis oil with the lemon juice.
- Spread the avocado evenly between the two slices of bread.
- Sprinkle the onion slices over the avocado, follow with the capers.
- Crumble the goat cheese over the sandwiches.
- Salt and pepper to taste.

Slice in half before serving.
